  1. Cut fruit into small pieces and place into a large mixing bowl.
  2. Coat the fruit in sugar 1/4 cup at a time, adding more sugar to your taste.
  3. Let sit for 1 – 2 hours covered in the fridge. This allows the sugar to draw out water from the fruit and start breaking the flesh of the fruit down.
  4. Take fruit from mixing bowl and put into a medium sized pot. Bring mixture up to a boil and start masticating fruit as it softens. Once fruit and sugar mixture is boiling reduce to a simmer and add your choice of acid (i.e. apple cider vinegar, champagne vinegar, lemon, etc.). Continue to simmer while breaking up large chunks of fruit to your desired size, once desired consistency is reached transfer jam to jars.
